Honey is a new fascination of mine, both the Honey itself and what I can do with it

My Eldest Brother has taken up Beekeeping and I started planning out what I could make to sell alongside of his honey (Top grade, all natural Comb Honey!! WOOHOO!). Preferably something edible and not the 'Usual' fare, like Bread or Cookies (Though i'll probably do that too).
So far, I've made Toffee (Excellent stuff), Though I used a very strong honey and I didn't particularly care for that flavor. It stuck to the teeth a lot, but dissolved much faster than Refined Sugar based Toffee, so overall it was good. It could almost pull the fillings out of your teeth though

I've made Marshmellows, very good consistency and flavor, but I made an oversight in the recipe, so they weren't quite perfect. But when we cut them into smaller pieces (They were 1" x 1" originally) and dipped them into Dark Chocolate, they were.. So much more than mere Marshmellows..

I also made something similar to a Caramel that tasted great but the consistency was off, so that needs a lot of tweaking.
The two things i'm real excited about right now are
Honey Chewing Gum! With flavors such as: Lemon, Cinnamon, Peppermint, ect. (Since I can't find anything that isn't this 'Sugar-Free' Aspartame crap that gives me headaches. It's awful stuff, Google it if you want to see what I mean)
And
Honey Soda! It's using Wine Yeast to carbonize the liquid, but there's very little alcohol (Doesn't ferment long), I wont be sure of the exact % until I brew it, but considering Beer is usually no more than 5%(?), I think it will be in the range of 0.3%-0.6% or maybe (0.4%-0.8%?), if my calculations of fermentation time are right.. I just have to figure out how to.. Fix it.. I don't want it be turning into Honey Beer or worse, drain cleaner, on unsuspecting people if they leave it out of the fridge and forget about it.. (Or Exploding!! It'll be in Plastic Bottles to prevent damage in that event). Yeast is very hard to stop, the little beggers.

And hey, if well made homebrew can beat store bought in the case of Beer, I suppose the same can be said for Soda, eh?
Heck, I even have a recipe for Dragon Whisker Candy made with Honey (But the shelf life isn't long enough to be a viable product

)
Eatmores, Honey Bread, Lemon Honey Cookies, Turkish Delight, Gum, Soda, Toffee, Honey Caramels, Chocolate coated Marshmellows.. My Honey based confectionery empire has begun!! MWAHAHAHAHAAAA!

(And apparently Honey is easier to digest than granulated sugar, since the Fructose and Glucose are separate. Go figure.)
That being said.. I wanted to ask you (Whoever read this far), what are your favorite flavors? or complimentary flavors you enjoy together? (Doesn't necessarily need to be a desert)
